Onam is an annual harvest festival, celebrated in different parts of India especially in Kerala. In this occasion, women dressed in their best tradition sari white-gold wear decked with flowers lay out rangolis on the floor of different hues and colors. The traditional lamp is lighted. The young women dance around the rangolis and the traditional lamps. This dance is popularly known as Thiruvathura.

Aviyal Recipe (Kerala special recipe)

Ingredients:

250 gms Cucumber
250 gms Snake gourd
250 gms Elephant yam
3 pieces Drumstick
50 gms Long runner beans
2 Carrots
100 gms Raw banana
1 tbsp Chilly powder
1/2 tbsp Turmeric powder
1/2 cup Sour curd
Curry leaves
Salt as required

Or

100 gms Raw mango
1 grated Coconut
10 gms Cumin seeds
50 gms Green chillies
6 pieces Small onions
4 tbsp Coconut oil

Preparation Method:

1. First, Chop all the vegetables in the same length, an inch per piece approx.
2. Grind coconut with green chillies and cumin seed into a coarse paste.
3. Heat coconut oil in a think vessel, add all chopped vegetables and cook it on a low flame with out adding water to it.
4. When the vegetables are cooked, add the raw mango and banana pieces and cook them with the lid off.
5. When the mango pieces are cooked and the water starts to evaporate, add the coconut mixture and mix well.
6. If you are using curd, add it along with the coconut mixture.
7. When the vegetables are dry, add the coconut oil and curry leaves and mix well.

Serve hot.
