Koottu Curry Recipe

Koottu Curry Recipe
Ingredients:

2 tbsp White Gram Dal
1/2 cup Bengal Gram Dal
1/2 cup Grated coconut
1/4 kgs (whole) Snake gourd, Long runner beans, Pumpkin, yam and cucumber
1/4 tbsp Turmeric powder
1/2 cup Drumstick
1/4 cup Coconut oil
1 tbsp Ghee
1 tbsp Mustard
3 Dry chillies
3 Green chillies
2 sprigs Curry leaves
Salt to taste

How to cook:

1. Grind coconut with turmeric powder and green chillies into a coarse paste.
2. Cook bengal gram dal by adding a bit of salt and water.
3. Cut the vegetables into small pieces and cook them.
4. Heat oil in a pan.
5. Add Mustard seeds, white gram dal, dried red chillies and curry leaves.
6. Add the ground coconut mixture. Saute for some time, till the water dries.
7. Add the cooked vegetables, salt and bengal gram dhal to it and put it on a low flame.
8. Fry 1/4 cup grated coconut in one tablespoon of ghee till golden brown.
9. Season the Koottu Curry with it and mix well.
